An unfolding story of provenance and passion, the restaurant at Zabola Estate invites guests to savour a taste of rural Romania. Within the dining room – a calm, classically styled space – you’ll embark on a culinary journey. It’s a journey that traces the Târgu Secuiesc rivers, Transylvanian pastures and Cernat farmland. You’ll taste honey from the estate’s hives and herbs that grow in the gardens, everything carefully selected and beautifully seasonal. For something equally inspiring but a little more intimate, ask about the hotel’s private dining experience. It could be dinner lit by 100 candles in the former stables, or a just-for-two supper in the woodland pavilion, as the resident deer dart past.
Each dish tells a quiet story of season and soil. We work closely with a network of local producers - whose deep knowledge and dedication bring us ingredients of remarkable character - trout from the creeks near Targu Secuiesc - dairy from Imeni and Covasna - pasture raised meats from the fields of Transylvania - vegetables from Cernat and rustic bread from Ghelinta. Our own bees gift us the honey - and in the warmer months - herbs and produce comes straight from the estates garden.
There’s a sense of being truly immersed in stillness and tranquillity at the Castle Spa, with its aquamarine tones and glass walls that open up to the gardens. Rituals, treatments and design are drawn from Bengali tradition and natural sources, chiming with the hotel’s air of quiet refinement. Bathe in the song of Tibetan bowls.
